  • 6 cups all-purpose flour

  • ¼ teaspoon ground nutmeg
  • 2 tablespoons white vinegar
  • 2 cups almond milk
  • 1 tablespoon pure vanilla extract
  • cups vegetable oil
  • 2 cups water at room temperature
  • 2 cups shredded carrots
Vegan Cream Cheese Frosting
YIELD: enough to fill and ice a 10-inch
(25-CM) round cake
Note: all ingredients should be at room temperature

  • 2 pounds cream cheese substitute
  • cups butter substitute
  • 1 cup powdered sugar
  • 2 teaspoons pure vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C/gas 4).
  2. Prepare four 8-inch (20-cm) round pans by
  3. putting 1 tablespoon of coconut oil in each
  4. one. Using a paper towel, spread the oil
  5. evenly over the entire inside surface of the
  6. pan. Then sprinkle the pans with flour and
  7. empty out the excess.
  8. In a stand mixer fitted with the paddle
  9. attachment, combine both sugars, the flour,
  10. baking soda, salt, cinnamon, and nutmeg.
  11. Turn the mixer on low (this will “sift” the
  12. ingredients).
  13. In separate bowls, add the vinegar to the milk
  14. and the vanilla to the oil.
  15. With the mixer running on low, add the milk
  16. mixture, the oil mixture, and half of the water
  17. and mix until fully incorporated. Add the
  18. remaining water and mix until completely
  19. Blended.
  20. Add the carrots and mix until evenly
  21. Distributed.
  22. Divide batter evenly into the prepared pans
  23. and bake for 30 to 35 minutes, or until a
  24. toothpick inserted into the middle of a cake
  25. comes out clean.
  26. In a stand mixer fitted with the paddle
  27. attachment cream the cream cheese and
  28. butter substitutes until smooth.
  29. Add the powdered sugar and vanilla on low
  30. speed and mix until fully incorporated.
  31. Switch the paddle attachment for the whisk
  32. attachment and mix on high until light and
  33. fluffy, 2 to 3 minutes
